Flabby

Intermediate Tasting & Sensory

Definition

A wine lacking sufficient acidity, tasting dull and lifeless.

Im Detail

Flabbiness is the opposite of crispness. Without acidity to provide structure and lift, wine tastes soft, heavy, and unrefreshing. Warm-climate whites are most prone to flabbiness. Winemakers combat this through early harvesting, acidification (adding tartaric acid), or blending with higher-acid lots.
