Definition
Pumping juice over the cap of skins during fermentation.

Also called pumpover. Juice is drawn from the bottom of the tank and sprayed over the floating cap. More aggressive than pigeage, it provides thorough extraction and cap wetting. Frequency and duration are adjusted for desired extraction level. Common in large-volume production and for varieties that benefit from robust extraction.
