Yield

Intermediate Winemaking & Viticulture

Definition

The amount of grapes or wine produced per unit of vineyard area.

Im Detail

Measured in hectoliters per hectare (hL/ha) or tons per acre. Lower yields generally correlate with higher quality — each vine produces fewer but more concentrated grapes. Appellation laws often set maximum yields: Burgundy Grand Cru allows 35-45 hL/ha; generic wine permits 100+ hL/ha. However, excessively low yields can produce unbalanced, overripe wines.
