Old vines naturally produce lower yields with smaller, more concentrated berries. Their deep root systems access water and minerals unavailable to young vines, contributing to complexity. South Africa uses 'Old Vine Project' (35+ years), while Australia's Barossa has centenarian Shiraz vines. There is no legal definition of 'old vine' — claims range from 15 to 100+ years.
