Sparkling wine made by secondary fermentation in the bottle.

The same process used for Champagne: base wine is bottled with yeast and sugar (tirage), secondary fermentation creates bubbles, extended lees aging adds complexity, riddling collects sediment, and disgorgement removes it. Outside Champagne, the term 'Méthode Champenoise' is prohibited by EU law. Cava, Crémant, Franciacorta, and English sparkling all use this method.
