Oak contributes vanillin (vanilla), eugenol (clove), furfural (caramel/toast), and lactones (coconut, especially from American oak). New barrels impart more oak flavor; older barrels primarily provide gentle oxygenation. Over-oaking masks varietal character and terroir.
