Adding grape spirit to fermenting wine to stop fermentation and preserve residual sugar. The timing determines sweetness — early addition for sweeter Port, later for drier styles. The spirit raises alcohol to 18-22%, killing yeast. Used for Port, Vin Doux Naturel (Banyuls, Muscat de Beaumes-de-Venise), and Sherry.
