The air space between wine and the closure in a bottle.

Also refers to the fill level of a bottle. As wine ages, slow evaporation through the cork increases ullage. Fill level is a key condition indicator for old wines: high fill (into neck) suggests good storage; low fill (mid-shoulder or below) indicates potential oxidation. Auction houses and merchants photograph fill levels for transparency.
