Racking

Transferring wine from one vessel to another, leaving sediment (lees) behind. The simplest and oldest clarification method. Each racking aerates the wine slightly. Multiple rackings over months gradually clarify wine naturally. Barrel-to-barrel racking is standard in traditional cellars.
