Pomace — the skins, seeds, and stems left after pressing — is distilled to produce this fiery digestif. Once considered rustic farmer's brandy, premium grappa from single varieties and artisan distillers has become a luxury product. Top producers include Nonino, Jacopo Poli, and Marolo. Grappa should be served at room temperature in a tulip glass.
