Removing collected yeast sediment from sparkling wine after riddling. The neck is frozen in brine, the cap is removed, and internal pressure ejects the frozen plug of lees. The bottle is then topped up with dosage (liqueur d'expédition) and corked. Late-disgorged wines spend extra time on lees for complexity.
