Exposing wine to air to allow aromas to open up.

Simply opening a bottle does virtually nothing — the small surface area at the neck provides negligible aeration. Effective breathing requires decanting or vigorous swirling. Young, tannic reds benefit most from extended breathing (1-2 hours). Delicate old wines can deteriorate quickly with too much air exposure. Breathing helps blow off reductive sulfur compounds.
