Removing unripe grape clusters in summer to concentrate the remaining fruit.

Also called vendange verte or crop thinning. By reducing yield (dropping clusters), each remaining cluster gets more vine resources — water, nutrients, sunlight. This produces more concentrated, complex grapes. A common practice in premium vineyards where quality trumps quantity. Typically done at véraison when uneven ripening can be identified.
