pH
Intermediate Chemistry & ScienceDefinition
A measure of wine's acid strength on a logarithmic scale.
Im Detail
Wine pH typically ranges from 2.9 (very acidic) to 4.0 (low acidity). Lower pH = more acidic, more stable, brighter color, better aging. White wines average pH 3.0-3.4; reds 3.3-3.8. pH affects SO2 effectiveness (more effective at lower pH), microbial stability, and color intensity. It is a crucial winemaking metric, distinct from titratable acidity.
