Definición

The harvest season, or the act of breaking grape skins to release juice.

Crush refers both to the physical process and the hectic harvest period. Modern crushing uses mechanical crushers that gently break skins without damaging seeds (which release bitter tannins). Some winemakers use whole-cluster pressing without crushing, especially for sparkling wine and delicate whites. 'Crush pad' is the area where grapes are received.
