Italian wine made from partially dried grapes.

The appassimento technique dries grapes after harvest, concentrating sugars and flavors. Amarone della Valpolicella is the most famous passito wine — a dry, powerful red. Recioto is its sweet counterpart. The technique is used throughout Italy for both sweet and dry wines. Passito wines are intense, with high alcohol and dried fruit character.
