Solera System

Fractional blending system used for Sherry, where wine is aged through a series of barrels (criaderas) of increasing age. Wine is drawn from the oldest row (solera) and replenished from the next oldest. This perpetual system means every bottle contains wine from the beginning of the solera. Produces remarkable consistency and complexity.
