Bottle Shock

Intermediate Aging & Storage

Définition

Temporary muting of wine's character immediately after bottling.

En Détail

Also called bottle sickness. The physical stress of bottling — oxygen exposure, temperature changes, sulfite additions — can temporarily flatten a wine's aromas and flavors. Most wines recover within 2-4 weeks. This is why wines sometimes taste different at the winery versus a week later at home. Not a permanent condition.
