Quercus suber, grown primarily in Portugal (50% of world supply) and Spain. Cork has sealed wine bottles since the 17th century. Its elasticity creates a near-perfect seal while allowing trace oxygen exchange that aids aging. Drawbacks: cork taint (TCA, 1-3% incidence), inconsistency, and cost. The natural cork vs. screw cap debate remains wine's most contentious closure argument.
