ICE-vine

Définition

German ice wine made from grapes frozen naturally on the vine.

Grapes must freeze to at least -7°C on the vine and be pressed while frozen. The ice crystals remain behind, yielding intensely concentrated, sweet juice. Eiswein is risky — grapes may rot before freezing or be eaten by birds. The result is extraordinary: crystalline sweetness with razor acidity. Germany and Austria produce the finest examples; Canada calls theirs Ice Wine.
