Tannins are phenolic compounds from grape skins, seeds, and stems (and from oak barrels). They bind with salivary proteins, causing the drying sensation. Young Cabernet Sauvignon, Nebbiolo, and Tannat are highly tannic. Tannins soften with age as molecules polymerize and fall out as sediment. Red wine has far more tannin than white.
