Whole, uncrushed grape clusters are placed in a sealed tank filled with CO2. Intracellular fermentation occurs inside each berry without yeast, producing bright, fruity, low-tannin wines. The defining technique of Beaujolais Nouveau. Produces distinctive banana, bubblegum, and candied fruit aromas.
