In Bordeaux, assemblage is the critical moment when the winemaker tastes individual lots (by variety, vineyard block, barrel) and decides the final blend. Each vintage produces different raw materials, making assemblage both science and art. Champagne assemblage is even more complex, potentially blending multiple vintages and dozens of crus.
