Austerity suggests discipline and restraint rather than generosity. Young Barolo, Chablis, and red Burgundy can seem austere, revealing their charm only after years of aging. Austere wines challenge casual drinkers but reward patient cellaring. The opposite of fruit-forward and opulent.
