Decanting serves two purposes: separating old wine from sediment, and aerating young wine. For old wines, carefully pour against a light source, stopping when sediment reaches the neck. For young wines, vigorous decanting opens aromatics and softens tannins. Duration varies: 15-30 minutes for old wine, 1-2 hours for young, powerful reds.
