Removing grape stems before fermentation.

In Depth

Most red wine is destemmed to avoid harsh, green tannins from stems. However, some winemakers deliberately include a percentage of whole clusters (stems intact) for added complexity, spice, and structure. Pinot Noir producers in Burgundy are the most notable practitioners of whole-cluster inclusion. The decision depends on stem ripeness (lignification).
