Also called the aftertaste or length. A long finish (30+ seconds) is a hallmark of quality wine. Great wines leave a persistent, evolving impression. Short finishes suggest simple or dilute wine. The finish should be clean and pleasant — bitterness, burning alcohol, or astringency at the end indicate imbalance.
