Fruity does not mean sweet. A bone-dry Cabernet Sauvignon can be intensely fruity (blackcurrant, plum) without any residual sugar. Fruit character comes from aromatic compounds (esters, terpenes) in the grape. Warm climates produce riper, more tropical fruit profiles; cool climates yield leaner, citrus-driven fruit. Fruitiness diminishes with age as tertiary notes emerge.
