Length

Intermediate Tasting & Sensory

Definition

How long the flavor persists on the palate after swallowing.

In Depth

Length is measured in caudalies (seconds). A wine with 8+ caudalies is considered long. The longest finishes in the world — 60+ seconds — come from wines like top Burgundy, Barolo, and aged Riesling. Length is one of the most reliable indicators of wine quality and is nearly impossible to fake through winemaking technique alone.
