Mousiness (from Lactobacillus, Pediococcus, or Brettanomyces) creates compounds with a mouse-cage-like retronasal impression. Uniquely, it is not detected on the nose — only tasted as a lingering, disturbing aftertaste. The compounds become volatile at saliva pH, which is why rubbing a drop on your hand reveals the taint. No cure exists once present.
