Traditionally: Cabernet Sauvignon, Merlot, Pinot Noir (red) and Chardonnay, Sauvignon Blanc, Riesling (white). The concept originated in 20th-century wine education. It is now considered outdated and Eurocentric — excluding Syrah, Nebbiolo, Tempranillo, Chenin Blanc, and hundreds of other world-class varieties. Still widely referenced in introductory wine courses.
