Key principles: match weight (light food with light wine), match intensity, contrast or complement flavors, consider acidity (cuts richness), consider tannin (needs protein/fat), and consider sweetness (wine should be sweeter than food for desserts). Regional pairing ('grows together, goes together') is the simplest rule. There are no absolute rules — only guidelines.
