The palate is assessed in three phases: the attack (initial impression), the mid-palate (where most complexity is revealed), and the finish (lingering flavors). A wine might have a bright attack, rich mid-palate, and long finish. 'Palate' also refers to a person's tasting ability — a trained palate can distinguish subtle differences.
