A subset of phenolics, polyphenols are the most studied wine compounds for health effects. Resveratrol (in red grape skins) gained fame for supposed cardiovascular benefits. Quercetin, catechin, and epicatechin are other important wine polyphenols. Concentration depends on grape variety, skin contact time, and vintage. Red wine contains significantly more polyphenols than white.
