Definition

Gradually tilting bottles to collect yeast sediment in the neck.

Essential step in traditional-method sparkling wine production. Bottles are placed in pupitres (A-frame racks) and given a slight turn and tilt daily over 6-8 weeks until vertical. The sediment slides to the neck for removal by disgorgement. Automated gyropalettes now achieve the same result in 3-7 days.
