Definition

Sulfur dioxide (SO2) used as a preservative and antioxidant in wine.

In Depth

SO2 has been used in winemaking since Roman times. It prevents oxidation, kills unwanted bacteria, and preserves freshness. All wine contains some natural sulfites from fermentation. Added sulfites are listed on labels ('Contains Sulfites' above 10 ppm). White wines need more SO2 than reds (which have protective phenolics). The 'sulfite headache' myth persists despite limited scientific evidence.
