Definition

Phenolic compounds that create astringency and structure in wine.

Tannins come from grape skins, seeds, stems, and oak barrels. They are essential for red wine's structure, aging potential, and food-pairing ability. Ripe tannins feel firm but smooth; unripe (green) tannins are harsh and bitter. Tannin levels are influenced by grape variety, maceration time, pressing pressure, and oak aging. They are virtually absent in white wines.
