Umami (from Japanese 'pleasant savory taste') affects wine pairing significantly. High-umami foods (parmesan, mushrooms, soy sauce, aged meats) can make tannic wines taste bitter and metallic. Pair umami-rich dishes with fruit-forward wines with low tannin. Conversely, umami enhances the perception of body and roundness in appropriate wines.
