Now officially IGP, the Vin de Pays category allows winemakers to use non-traditional grape varieties and label by varietal name. Vin de Pays d'Oc from Languedoc is the largest category, producing varietal wines that compete with New World labels. The freedom of VdP regulations has enabled innovation that stricter AOC rules sometimes stifle.
