Fermenting grapes with stems intact rather than destemmed.

Including stems adds herbal complexity, spice, and structural tannins. The technique requires fully ripe, lignified stems — green stems contribute harsh, bitter flavors. Burgundy's greatest domaines often use 20-100% whole clusters for Pinot Noir. Northern Rhône Syrah and some Grenache also benefit. The percentage varies by vintage conditions.
