Controversial condition primarily affecting white Burgundy from 1996-2005 vintages (and other regions). Wines age decades faster than expected. Suspected causes: poor cork quality, insufficient SO2 at bottling, and climate-change-driven grape chemistry changes. The exact mechanism remains debated.

Gold or amber color in wines that should be pale. Honey, sherry-like oxidative notes in young wines (3-7 years). Loss of freshness and fruit. Bottle variation is common — some bottles are fine while others from the same case are oxidized. This inconsistency is a hallmark of premox.
Pencegahan
Higher SO2 at bottling, better cork selection, screwcap closure (eliminated premox in producers who switched), and gentle handling of must and wine. Some producers have returned to earlier bottling dates and lower press fractions.
