About This Method
Adding sugar to grape must before fermentation to increase potential alcohol. Legal in cooler regions (Burgundy, Champagne, Germany) where grapes may not reach full ripeness. Illegal in warmer regions (California, Australia, Southern France). Named after Jean-Antoine Chaptal. Does not add sweetness to the finished wine.
