About This Method

Artificially freezing grapes in a cold room to simulate ice wine conditions when natural freezing doesn't occur. Frozen grapes are pressed while still frozen, yielding highly concentrated, sweet juice. Legal in some regions as an alternative to natural ice wine. Produces similar but not identical results.
