About This Method

Adding a substance that bonds with unwanted particles (proteins, tannins, color compounds) and settles out. Traditional agents include egg white (tannin reduction in reds), bentonite clay (protein stability in whites), and isinglass (fish bladder for clarity). Vegan alternatives (pea protein, PVPP) are increasingly common.
