Biological aging under a film of Saccharomyces yeast (flor) that forms on the surface of Fino and Manzanilla Sherry. The flor consumes glycerol and produces acetaldehyde, creating distinctive nutty, saline, bread-dough character. Requires specific humidity, temperature, and alcohol levels (14.5-15.5%).
