About This Method

A hybrid approach where grapes at the bottom of the tank are crushed by the weight above, beginning conventional fermentation, while upper clusters undergo carbonic maceration. More common than full carbonic maceration, it produces wines with some varietal character alongside fruity carbonic notes.
