Whole Cluster Fermentation

Fermentation

Whole cluster fermentation: including stems for herbal complexity and structural tannins.

About This Method

Including grape stems (rachis) during fermentation adds herbal, spicy character and structural tannins. Popularized by Burgundy producers like Domaine de la Romanée-Conti. Requires fully ripe, lignified stems to avoid green, vegetal flavors. Used in 10-100% of the batch depending on vintage and house style.
