Unctuous describes dessert wines and some full-bodied whites with viscous, almost syrupy texture. Sauternes, Tokaji Aszú, and Ice Wine exemplify unctuousness. The sensation comes from high sugar, glycerol, and extract. Despite the richness, the best unctuous wines maintain balancing acidity to prevent cloying sweetness.
