The nose accounts for roughly 80% of what we perceive as flavor. Professional tasters assess the nose in stages: first without swirling (most volatile compounds), then after swirling (heavier aromatics released). A 'closed' nose reveals little aroma and may open with aeration. 'On the nose' is the standard phrase for describing a wine's aromatic profile.
