Acidity is one of wine's four structural pillars alongside tannin, alcohol, and sweetness. Tartaric, malic, and citric acids naturally present in grapes give wine its freshness, lift, and food-friendliness. High-acid wines taste crisp and refreshing; low-acid wines feel flabby or flat. Cool-climate wines typically show higher acidity.
